Granada gastronomy: Papas a lo pobre.

"Enjoy intelligently the pleasures of the table".



  • 4 big potatoes.
  • 1 big onion.
  • 1 big green pepper.
  • 1/2 head of garlic.
  • 2 eggs.
  • Extra virgin olive oil.
  • Salt.
  • Vinegar.


  • Peel the potatoes and cut them into thin slices.
  • Cut onion into strips. 
  • Cut pepper into strips, separately.
  • Put a big pan to warm up with a good amount of oil

  • When is hot, add the onion and the garlic cloves (unpeeled) and turning down the heat.
  • We wait a few minutes and when the onion begins to be transparent, add the potatoes and pepper and a pinch of salt.
  • Cover the pan and let simmer for 15 minutes, occasionally and with care not to break the potatoes with a spatula we'll give a couple of laps.
  • Once the potatoes are roasted, we try the taste of salt and add a splash of vinegar and leave for 5 more minutes.
  • We retired with a spatula and serve.
  • In the oil with which we cooked potatoes, we fry a couple of eggs.
  • We put them over the potatoes and ready.
